“Fried” Quinoa

“Fried” Quinoa
This is something I whipped together one day from leftovers – and it was actually good enough to reproduce again! I have “fried” in quotes, because there’s nothing fried about this quinoa, just reminiscent of fried rice.

Ingredients:

1/4 cup grilled peppers and onions, chopped
1/4 cup egg whites
2 tablespoons fresh chopped cilantro
1/2 cup (dry) quinoa (white)
2 cloves fresh garlic (through a garlic press)
0-2 tablespoons soy sauce (to taste)
ground black pepper (to taste)

Grill peppers and onions (I put mine on a skewer on the grill) and cut into small pieces. Make quinoa “regularly” ie by the back of the package. In a skillet, make egg whites and chop into small pieces. Add quinoa, peppers, onions, and all of the spices. Serve hot.
